Dyspepsia, Pig's Head Cheese and Universal Magnetic Balm: Recipes and Home Remedies, 1896

OBJECTIVES:

To familiarize students with examples of recipes and home remedies used in Cleveland at the end of the nineteenth century to allow students to make comparisons between recipes and home remedies used in late nineteenth century Cleveland, with those of today.

LESSON FOCUS:

  1. What were some examples of recipes and home remedies used in late-nineteenth century Cleveland?
  2. How do these recipes and remedies differ from those of today?

TEACHING PROCEDURE

  1. General Instructions: Review the vocabulary terms with which students might not be familiar.
  2. Have students read through the recipes and complete the following activities:
    a. Compare and contrast the recipes from 1896 with ones from today. Students should particularly note the different types of measurement used.
    b. Students should decide whether any of the home remedies or helpful hints might beuseful today.
    c. Have students research additional home remediesfrom the time period. Ask the students if they know of any home remedies that their parents or grandparents might stilluse today. Have the student examine the labels of the patent medicine samples. Studentsshould be aware that before the early 1900s, ingredients and the claims made for patentmedicines were not regulated by the government. Medicines could claim to cure a varietyof illnesses with the same ingredients, i.e. Universal Magnetic Balm.
    d.Have students compare the ingredients in recipes used by today's health conscious Americans vs. those of the late-nineteenth century. How do the recipes differ?
    e. Students might want to prepare one of the examples from the cookbook samples. The maple wax candy might be a good choice since the ingredients and preparation are fairly simple.
